(Note: We only cooked it for 45 minutes and didn’t add the cup of water because we couldn’t wait but if you give it 4 hours, the starches in the beans thicken it up to a perfect chili consistency.)

Instructions
  1. Brown meat in a large saucepan over medium-high heat. Remove any excess fat leaving some for flavour.

  2. Transfer cooked meat to slow cooker. Stir in water, onions, tomatoes, kidney beans (or chickpeas), black beans, corn, chocolate chips, chili powder, cumin, oregano, and salt. Cook on High for approx. 4 hours or low for 6-8 hours.

  3. Top with cheddar cheese or sour cream, if desired.


Recipe Notes

Add a serving of tortilla chips to bring the balance of carbohydrates to fats and proteins a little closer to 0 and enjoy!
