Hearty Chili

Homemade Chili is one of those great one pot dishes that can be made in advance and only gets better as the flavours meld. It truly is comfort in a bowl.  Chili is a dish that is high in protein and fibre plus healthy fat if you top it off with cheese and sour cream.  You want to make sure that you put some carbs on the side like bread or tortilla chips to make this meal a better balance of the three macro nutrients.

Instructions
  1. Saute onion, peppers and garlic in some olive oil just until softened, remove from pan. Using same pan add meat and brown over high heat. Drain any fat.
  2. Return vegetables to pot with remaining ingredients except beans. Heat until boiling then reduce to a simmer. Cook uncovered for about 1 hr and 15 min. Add beans in last 15 minutes before the end of cooking.
