A great make ahead salad that’s great for lunch or snack. Always a good idea to have things prepared in the fridge for a quick and easy grab!  Don’t forget that a -14 Balance Factor means this dish is higher in protein and fats than carbohydrates.  A nice slice of sourdough bread or a handful of crackers will make this lunch not only healthy but energizing and satisfing!

Instructions
  1. Combine all ingredients together to coat the chicken well. Adjust seasoning and refrigerate for 1 hour before serving. Will keep in a tightly sealed container for 3-5 days.
Recipe Notes

Option: experiment using ethnic flavors in this salad, for example curry powder for flavor and turmeric for color, 1 tsp. each.
