It’s Muffin Monday! Pumpkin muffins are perfect anytime of the year. What’s the other trick to making good muffins? Stir the batter as little as possible or just until moistened. Don’t forget to double the batch for another Muffin Monday.

Instructions
Blend sugar and lard/butter well.
Add egg and beat until batter is light and fluffy.
Mix in pumpkin and vanilla, gently.
On top of batter put flour first then remaining dry ingredients. Mix just until blended.
Spoon batter into 12 muffin cups. Bake at 375F for 22 minutes.
