Salmon Rosti

Instructions
  1. Wash potato and shred with a hand grater or food processor.
  2. Toss with flour and salt and pepper.
  3. Melt lard or butter in frying pan.
  4. Spread potato mixture over hot pan to make a potato pancake. Do not disturb.
  5. Beat eggs and milk in a separate bowl.
  6. When edges have browned and potato is turning translucent, flip the entire potato pancake over.
  7. Slowly pour egg mixture over potato pancake. When bottom side has browned, flip once more to cook any raw egg on top of potato.
  8. Divide in half and place on serving dishes. Lay smoked salmon on rosti with two asparagus spears. Drizzle each rosti with 1 tbsp of Hollandaise sauce. Enjoy!
Recipe Notes

Optional: Replace smoked salmon with the same amount of ham or cooked bacon slices.
