A fresh ear of corn on the cob is almost like dessert when it’s recently picked from the field. Unfortunately, the older the corn is and the longer you cook it, the starchier it gets. When it comes to cooking corn, the best way we have found to keep the sweetness is by doing it in the microwave.
With a sharp butcher's knife, cut around the bottom of the cob then throught the stalk, 1 cm from the end. Make sure you can see all the kernels and the husk is no longer securing the end.
Place two ears with husks on in the microwave. Cook for 5 minutes on high. (For one cob of corn, cook on high for 3 1/2 mins.)
While corn is cooking, mix together mayonaise, sour cream, and seasoning in a small bowl. Crumble feta cheese.
Remove ears from the microwave with an oven mitt as husks might be hot. When ready to eat corn, use a corn skewer or a fork to anchor the cut end and pull the husks off the cob. Discard the husks.
Spread half of the mayo/sour cream mixture onto each cob of corn and crumble half of the feta cheese over the mixture. Enjoy!
Recipe Notes
Don't forget good old butter and salt if the mayo/sour cream mixture doesn't suit your fancy. One tbsp of butter and a shake of salt per cob provides 190 calories and a BF of 3!
