This is one of those fabulous 5-ingredient recipes that has changed my attitude towards vegetables! My kids love it and on a cold winter’s day with a warm baguette on the side, I score big points!
Instructions
- Melt butter in a soup pot. Saute all ingredients together except for the water x 10 mins.

- Add water. Bring to a boil and simmer uncovered x 1 hr.

This recipe is higher in fats and proteins than carbohydrates. It scores a -6 on the Balance Factor. To add some calories and to make sure no one comes back looking for more food, serve with bread or crackers and cheese or pate or hummus and you will have all the micro and macro nutrients you need to provide a healthy meal.
