Instructions
Combine all ingredients and mix until a ball of dough that is consistent and slightly sticky. Let sit for 10 mins. This lets the gluten develop to allow you to roll out thin tortillas.
Cut into 8 equal sized balls and place on parchment paper. Dust parchment paper with flour and roll out balls to 4 inch discs. Once you have rolled out all 8 balls, go back to the first one and begin rolling outward turning the disc as you roll to get a 9-inch diameter tortilla.
Using a dry, non-stick frying pan, cook tortillas over med. heat until they bubble (approx. 1 min.) and then turn. When the other side's bubbles are browned, remove and put on a plate. Cover with a piece of parchment to prevent the tortilla from drying out.
