Mexican Bean Salad

This is a side dish to any summer meal.  It’s fresh, clean flavours almost cleanse the palate as it adds great balance to the main protein in your meal.

Instructions
  1. Rinse and drain beans, chick peas, and corn in a colander. Put beans in a large, wide bottomed bowl.
  2. Add diced red pepper, red onion, and cilantro. Toss well.
  3. Mix ingredients for dressing in a separate bowl and drizzle over bean mixture tossing well.
