This is a staple dish at 4 the Luv of Food Café! Add a side of shrimp and seafood sauce with a fresh baguette to drag through the vegetable juice and you would think you had died and gone to Greece!

Instructions
Combine first four ingredients in a flat bottomed bowl. Sprinkle salt over vegetables and let 'sweat' for 10 mins. The salt will pull the juices from the vegetables.
Add the oregano, and feta and olive oil to the vegetables. Toss gently. Let the juices flow to the bottom of the bowl and drag slices of baguette through the juice.
Recipe Notes
Serve with chilled shrimp and homemade seafood sauce on the side and you have a perfect summer meal. Calories 410, BF -5.
