This delicious meal is a family favourite. Even though its a pasta dish, it’s Balance Factor is -36 thanks to all the protein and healthy fat to balance those carbohydrates. It freezes well too. But most importantly, a nice glass of wine or a beer could be easily balanced with a dish like Fettuccine Bake!

Ingredients
- 1 1/2 lbs italian sausage mild, sweet, or hot
- 1 onion chopped
- 2-3 tomatoes chopped (or 1-15 oz. can)
- 1 cup shredded mozzarella cheese
- 1 tbsp dried oregano
- 3 tbsp butter melted
- 1/2 cup grated Parmesan cheese
- 3 eggs
- 1/2 tsp parsley
- 1/2 lb dry fettuccine noodles

Instructions
- Bring 6 cups of water to a boil. Cook noodles as per instructions on package. Drain and set aside.
- Cut skins from sausage and place in large, deep frying pan. Add onions cook over med. heat. Break up sausages until the meat browns. Remove excess fat.
- Mix in tomatoes and oregano and simmer x 20 mins. While meat mixture is simmering, turn oven to 375 degrees.

- When tomatoes have softened and liquid reduced, stir in mozzarella cheese. Transfer into the bottom of a 10" pie plate. Gently flatten meat mixture.

- In a large bowl, add melted butter, eggs, parmesan cheese, and parsley. Toss cooked noodles in egg mixture.

- Pour egg mixture over meat mixture and gently flatten to edge of pie plate.

- Bake in 375 degree oven for 30 minutes.
