Instructions
  1. Bring 6 cups of water to a boil. Cook noodles as per instructions on package. Drain and set aside.
  2. Cut skins from sausage and place in large, deep frying pan. Add onions cook over med. heat. Break up sausages until the meat browns. Remove excess fat.
  3. Mix in tomatoes and oregano and simmer x 20 mins. While meat mixture is simmering, turn oven to 375 degrees.
  4. When tomatoes have softened and liquid reduced, stir in mozzarella cheese. Transfer into the bottom of a 10″ pie plate. Gently flatten meat mixture.
  5. In a large bowl, add melted butter, eggs, parmesan cheese, and parsley. Toss cooked noodles in egg mixture.
  6. Pour egg mixture over meat mixture and gently flatten to edge of pie plate.
  7. Bake in 375 degree oven for 30 minutes.
